بالحديث عن سلطة المعكرونة فالمكرونة مشهورة عالميا بأنها وجبة إيطالية بالأساس، وهناك روايات تؤكد ذلك؛ فهناك من يقول إن الباستا كانت من الأطعمة التقليدية في جزيرتي صقلية، وسردينيا ومدينة كالياري، وتقول هذه الروايات إن هناك وثائق تاريخية يعود أصلها لعام 800 ميلادياً، كانت تحتوي على وصفات للباستا المجففة المصنوعة من القمح الصلب، وذلك كما ورد في كتابات العالم الإدريسي.

والإيطاليون هم الأوائل الذين قاموا بتقديم المكرونة كطبق رئيسي، ومع بداية عصور التطور في إيطاليا كان يتم اعتبار الطحين والمكرونة أطعمة للأثرياء فقط، لذا كانت المكرونة المتاحة للطبقات الأقل ثراءًا، ويتم استخدامها في الشوربات حتى تكفي عدد أكبر من الأشخاص وكان يتم تقديمها في المناسبات الخاصة.
وكانت كتب الطبخ الإيطالية في القرون الوسطى تحتوي على وصفات للباستا يتم تقديمها حاليا مثل اللازانيا، الرافيولي، اللينجويني والشعيرية، وتعتبر هذه الأشكال هي الأولى في تاريخ الأطعمة الإيطالية.
وشهرة المكرونة توسعت مع دخول إيطاليا عصر النهضة، لتصبح مركزا تجاريا مهما في البحر المتوسط ولينتقل هذا الطبق من هناك إلى شتى أنحاء العالم.
